Despite those challenges, hard-working producers like Silvestre Vasquez and Joel Lopez are committed to advancing their industry's reputation by experimenting with new growing techniques and high-profile varietals. This particular coffee comes from the Pacavita region, surrounded by natural reserves and mountains, an ideal setting for growing coffee cherries. The humid rainy season produces stunning cherries that are tended to with care, and the clear dry season allows for sun-drying of the washed coffees. The beans are grown at high elevations in rich clay soil, where plenty of warm sun ensures high-quality beans from start to finish. Our Veracruz Mexican Decaf is a true gem, sustainably grown on small family farms in the second-largest coffee-producing state in Mexico. This lot of Typica, Bourbon, and Caturra varietals was carefully selected and underwent a washed process before being decaffeinated using the pure and chemical-free Mountain Water Process at the Descamex facility. The result is a coffee that maintains its flavor and aroma with only minor changes to its original sensory profile.
